Two plots, which ripened well so Jean-Marc was able to use some stems, around 40%. Not very much deeper in colour. The bouquet is exquisite, light raspberry and alpine strawberry, floral though in style, with that light peppery note from the whole bunches. This comes back behind. A point of acidity and a greener note that will just take a year or two more to resolve. Will not bottle for a while. 11.65% alcohol. I do admire both the decision not to chaptalize and the quality of the resulting wines.
Domaine Roulot has always been among the best producers of Burgundy. Under the guidance of Jean-Marc Roulot, the domaine is now amongst the few whose wines are always sold out even before they are in bottle. Jean Marc’s wines have the same precision and energy as the individual. Like the man, they are full of spirit and intensity.
